fast, and [kind of] healthy

My girl friends and I are always talking about how it’s tough to work hard, play hard, be a good friend/girlfriend/wife/sister/daughter/coworker, stay actually connected to everyone…and on top of it, eat healthy.  So, we did a quick round of recipe swap.  I shared my oh-so-simple seared wasabi and sesame tuna, but this is another favorite of the husband’s and mine.

Alright…not sure it can get any easier.  You need:

Romaine lettuce, blue cheese crumbles, thick sliced bacon, cherry tomatoes, and balsamic vinaigrette.  If you’re feeling a little more decadent, grab your favorite blue cheese dressing as well!

Wash all produce.  Cook up the bacon single-layer.  Cut the cherry tomatoes in half (about 10 for each salad.) Keep the romaine lettuce assembled as much as possible.  Slice in half, and place each half cut-side-up on a baking sheet.  Broil on high for 4 minutes, or until the top edges look a little browned.  Set aside.

When the bacon is done, take it out of the pan and on to a paper towel to wick up excess oil.  Cut in generous 1-inch pieces.

Layer on the cherry tomato halves, bacon pieces, blue cheese crumbles and a sprinkle of balsamic on the warm romaine.  Grab that blue cheese dressing for that extra creamy kick!

Voila!  I’m sharing this today, looking at this picture, knowing that our apartment [love nest 2.0] will soon be dis-assembled.  Why? We got the house!  After a few obstacles, it’s our’s!  We close today, and I cannot be more excited to share the house renovation with everyone.  Stay tuned!
